These were SUPER quick to make and were delicious. I used my potato masher, but you could also make it in the food processor (it would be smoother – can’t decide if that would be better or not! the texture is nice this way). #endramble

Burgers:
-2-540mL cans of chick peas drained, rinsed & mashed
-2T olive oil
-2T water
-2T curry powder
-1C oat flour (1C rolled oats blended to flour)
-pink salt to taste
-handful of cilantro, chopped

Mash all ingredients until well mixed, form burgers (add water if needed for forming) and fry on a non stick griddle or pan (no oil needed) – made about 12 burgers (leftovers!)

Salsa:
Diced mango (2), 1/2 avocado, 2T red onion & cilantro dressed with fresh lime juice from 2 limes.
