This meal is great and simple meal for a busy weeknight. Home and cooked in about 15-20 minutes.

Serves 2 adults & 2 kids

  • 2 Chicken breasts
  • Pink Salt
  • Garlic powder
  • Pepper
  • 1t coconut oil or olive oil
  • 1/2 red onion
  • 1 red pepper
  • 1 bunch of fresh Kale OR 2C frozen kale
  • 2T water
  • 1-2t chili powder (depends on your taste buds!)
  • 1 lime
  • 6 corn tortillas  (2 each for adults, 1 each for kids)
  • 1/2 Avocado (optional)

In a large non stick pan with a lid stir fry chicken breast. Season with pink salt, garlic powder & pepper. As it’s cooking slice the red onion and chop the pepper. Once browned add in a thinly sliced red onion (about half), and one chopped red pepper and sauté to tender crisp. Wash the Kale and remove it from the stem and tear into bite sized pieces. Add in about 2T water and put lid on to wilt kale. Set your corn tortillas to toast. Add in 1-2t chili powder to taste & juice of 1 lime. Layer into toasted corn tortillas and top with avocado (optional)!
