Treats are part of a healthy lifestyle in my books. But if I can find a way to make it a little more nutrient dense (without sacrificing taste), then hey, why not! Here’s a new recipe that I concocted on a Friday night when I felt like a chocolate chip cookie!

  • 1/2C butter
  • 1/4C coconut oil
  • 1C Brown Sugar
  • 2T Chia seeds
  • 1 mashed banana
  • 1t vanilla
  • 3C sprouted spelt flour (or whole grain flour)
  • 1C rolled oats
  • 1t baking soda
  • 1/2C unsweetened coconut
  • 1/2C Chocolate chips (I use the mini’s to spread the chocolate love around!)

Preheat the oven to 375F. Mix up the wet ingredients up to the vanilla. Beat so they’re smooth. Add in the dry ingredients. Mix well.

Roll the cookie dough into 1T balls and bake for 8min (or so) until firm.

These freeze beautifully. I actually love them straight out of the freezer.
