Delicious supper! And only one dirty pot! I saw a recipe a while back somewhere…but of course couldn’t find it exactly. So I put this together and hello YUM.

1T avocado oil
1 onion, diced
1 orange pepper, diced
1C frozen corn
1 can of diced tomatoes
1 can of black beans, drained & rinsed
1C quinoa, dry
1T chili powder
1t cumin
1/2t chili flakes
1/2t pink salt
2C chicken (or veggie) broth

Sauté onion & pepper until soft and then add corn until thawed. Add in remaining ingredients and stir until well mixed. Simmer covered for 20ish minutes.

Serve with 2T crumbled goat cheese, a sprinkle of green onions & a few black olives (optional).
