Is there anything more fantastic than coming home to dinner almost being done? I think not. Threw this one together and left the house for a busy day and came home and it was nearly done! #magic
This is the brainchild of my child…my 10-year old son Connor! Yay to getting kids to help with meal planning. His idea: I want to make a pasta salad out of pizza toppings. I immediately got behind this. Here’s what we did
Last night I set out to make a Poke bowl. Instead of sashimi the plan was to include my caramelized tofu. I pulled up the recipe and started cooking the rice and pickled carrots. I’ve only ever had one Poke bowl so this seemed reasonable. Half way through preparing the remainder of the ingredients to layer into the bowl I realized….I was on the Banh Mi recipe! Since I found that recipe a wee bit lacking in the veg department I looked at my Poke bowl recipe and…THIS was born!
Noodle Salad is not only simple, it’s fresh, light and family friendly! Especially if you let everyone build their own bowl!
I was looking for a simple muffin recipe that included apples, carrots and was gluten free and didn’t find one that fit the bill, so I created this one! Super happy with how they turned out! Bonus: they freeze and thaw beautifully as a lunchbox item!
This simple quinoa salad came together in a flash (which was great because while I knew I wanted to create it, I forgot to do it until the last minute (you know, when people are whining about being hungry).
I love nicoise salad. I don’t make it nearly enough because my family aren’t tuna lovers (they eat kale though…win some/ lose some). But this was a perfect solution. Just me, all the stinky tuna I want and a bowl lunch that was super satisfying!
This was a “we forgot to pull pork chops out of the freezer…we need to leave for xyz in 30 minutes, what are we going to eat” situation. Enter the secret ingredient…
This (like so many of my recipes) was born out of a need to use something up. I had 4 fresh mango’s in my fridge that needed eating. I know…the hardships! This came together and I was in love immediately. It’s fresh and perfect for summer!
Ok, first off I have nothing against grains. Whole grains are awesome, there just aren’t any in this AWESOME muesli and as such…the name. This recipe is flavourful, fast and filling. Superyum!
Ever get excited by those “meals in minutes” headlines and then you go to do it and it’s NOT a quick meal at all? Yeah, me too. #petpeave These are my TOP picks for meals in 20 (or less) – that are ACTUALLY ready in 20 or less – and super tasty! Enjoy!
I love Bun Chay (Vietnamese Noodle Salad). It’s so delish. In an effort to shake things up I decided to use the flavours to inspire a quinoa salad and I MAY have the dish of summer 2018 in my hands. I served it up with caramelized tofu, but it would be equally delish with some steak slices, chicken or fish!
