FreeYUM Granola Bars
I used a Granola Bar recipe I found in the cookbook Deliciously Ella as a launching pad. The recipe used softened and blended dates as the “stick”…#brilliant! Here’s what I came up with.
Vegan Chocolate Bombs
These little morsels of chocolatey goodness were a hybrid of an old recipe I have for Chocolate Chip Cookies that I modified to make Gluten Free, Dairy Free and DELICIOUS!
Name This Muffin!
These muffins were born from my desire to make something different and also use up some pureed pumpkin in my freezer. I realized part way I didn’t have any non-dairy milk and…so I used canned coconut milk. Super happy with the results. Delicious, moist and flavourful!
Sundried Tomato & Feta Turkey Meatballs
I created these little balls of Turkey heaven last week and quite enjoyed the leftovers (big batch recipe of course!). They have Sundried tomatoes, spinach, and goat feta all wrapped up in one delicious meatball! Bonus? They got a thumbs up 👍🏻 from all 4 Goerzen’s!
Tex Mex Hamburger Soup with Quinoa
Looking for a shake up on the traditional Hamburger Soup (and having a few extra veg in my fridge I was hoping to clean out) this little meal-in-a-bowl gem was born. I do love a balanced meal in a bowl! Extra Lean Ground Beef (approx 1lb flat) 1 onion, minced 6...
Red Lentil and Chickpea Curry with Simple Chutney
Yum-O! This is a recipe from the fabulous cookbook, Oh She Glows Everyday. It was simple, quick and family friendly (read my kids ate it mostly without complaint!). I kept to the ingredients but fast-tracked the recipe by cheating on the lentil cooking part.
Chili-Garlic Glazed Salmon with Minty Peas
You know when you re-discover a cookbook and find a gem of a recipe in it? Yup. LOVE that! Welcome to the rotation Chili-Garlic Glazed Salmon with Minty Peas!
Miso Maple Slaw
Fresh & tasty salad alert! This was so simple really tasty. My kids LOVE edamame so that made it an instant hit (even if my 6-year old picked out ONLY the Edamame #reallife)
Fennel & Cabbage Slaw
This is simple, fresh and SO tasty! And is great leftovers!
Red Hot Spicy Peas
This was a simple, quick side for grilled chicken but it would pair beautifully with chicken or pork too! Or have it on its own as a veggie meal on brown rice or quinoa! #yum
Feta & Basil Turkey Burgers
Hello burger season! I love turkey as a base for burgers. It’s generally leaner than beef & I find it’s more complimentary to add ins for flavour. This one was inspired by a Caprese Salad!
