This is a simple salmon recipe my cousin introduced to me. I can’t really even call it a recipe…it’s just simple & so lovely.
- 1T Pesto per salmon fillet
- 1 salmon fillet per person
Preheat the oven to 375F. Lay out some foil on a pan. Lay salmon fillet onto the foil and then spread 1T of pesto onto the salmon and wrap it up. Bake for 15-20 minutes (check – it should “flake off” when you place a fork into it).
Delicious served with steamed veggies or salad and wild rice or quinoa (pictured here with my Israeli Couscous “Risotto” with Sundried Tomatoes)!

1 red & 1 orange per serving
note: pesto isn’t listed on the orange container list, but because it’s made of pine nuts, oil & herbs I am classifying it as an orange (aka it’s ME approved).
