I love nicoise salad. I don’t make it nearly enough because my family aren’t tuna lovers (they eat kale though…win some/ lose some). But this was a perfect solution. Just me, all the stinky tuna I want and a bowl lunch that was super satisfying!

The recipe below is for a lunch sized version, but this could easily be scaled!

1/2C Quinoa
1 can of solid white tuna (in water)
1 Roma tomato, diced
1/4 yellow pepper, diced
1/4 cucumber, diced
1/4C matchstick carrots
6 kalamata olives
1T minced red onion
1/2C flat leaf parsley, chopped
2T feta cheese crumbled
1-2t olive oil
1-2t red wine vinegar
Splash of Apple cider vinegar
Sprinkle of dried mixed herbs (I use the Krirkland brand organic no salt one).

Don’t love tuna? Swap it for the protein of your choosing! Grilled chicken would be delish!
