This dessert is simple & quick and totally fit the bill for me – fresh & light but still satisfying!

1.5T chia seeds
1/2T unsweetened coconut flakes
1/2C unsweetened coconut milk (just to cover)
1/2C frozen organic raspberries

Pour coconut milk over chia seeds & coconut. Allow to sit for 10-15 minutes (longer if you can). Throw frozen berries in. Let sit for a few minutes so they sort of thaw. Mix it up. Eat & enjoy!
