Ican’t possibly RAVE enough about making extras when you cook dinner. Whenever I cook a protein “staple” for dinner I always make MORE than we need – whic means lunch the next day can look like THIS! I’m also seriously obsessed with cabbage right now!
We’d had a simple dinner the night before: Salmon baked in foil.
- Preheat the oven to 475F
- In foil place a defrosted salmon fillet with a squeeze of fresh lemon juice, a sprinkle of pink salt & pepper.
- Bake for 15-20 min until the salmon flakes away
Next day I will use the leftover salmon on a salad OR a fresh taco! For this one I used a brown rice tortilla and topped it with a simple slaw: red cabbage & peppers dressed with avocado oil, apple cider vinegar, lemon juice, S&P. Topped with homemade guacamole (1/4 avocado, juice of 1/2 lime, S&P, dash of hot sauce).

1 red, 1 yellow, 1+ green, 1t (oil for dressing), 1 blue (guac)
