This is a weekly hit at our house. I keep the toppings simple (and sneak in some veggies) and the kids can build their own!
- ground turkey
- 1T chili powder
- 1 medium zucchini grated
- 1 pepper, chopped finely
- romaine lettuce chopped
- tomatoes, chopped
- fresh salsa
- guacomole (1 avocado mashed with juice of 1 lime and a dash of franks)
- Corn Tortillas
Brown the turkey meat in a non-stick pan. Once it’s browned add in the grated zucchini & chopped peppers and the chili powder and cook. Toast the corn tortillas and then layer on the lettuce, meat, tomatoes, salsa & guac (optional).
