This is a weekly hit at our house. I keep the toppings simple (and sneak in some veggies) and the kids can build their own!

  • ground turkey
  • 1T chili powder
  • 1 medium zucchini grated
  • 1 pepper, chopped finely
  • romaine lettuce chopped
  • tomatoes, chopped
  • fresh salsa
  • guacomole (1 avocado mashed with juice of 1 lime and a dash of franks)
  • Corn Tortillas

Brown the turkey meat in a non-stick pan. Once it’s browned add in the grated zucchini & chopped peppers and the chili powder and cook. Toast the corn tortillas and then layer on the lettuce, meat, tomatoes, salsa & guac (optional).

1 yellow, 1 red, 1 green & 1 blue (optional)
