I’ve long coveted the amazing Beet Quinoa Salad from a local restaurant that is no closed. Since I can no longer sleuth out the flavour palate by eating there, I have to bank on my memory. But I think I’ve done it. For real. This is so close…and even if it’s not “it,” it’s darn close and it’s delicious. Which is good enough for me!

We love a good bowl dinner in our house. And this one was great because I was able to customize each bowl to everyone’s taste-buds! I simply prepped all the various ingredients and then each member of the family prepped their bowl! Easy Peasy!
Growing up my mom and the best cold curried chicken that she always served with this amazing cold rice dish. It’s still one of my all-time favourite meals in the summer.
