Rhubarb Oatmeal Muffins
Growing up my mom made a delicious rhubarb crisp. This muffin reminds me of it – the combination of the cinnamon and rhubarb take me back and make them good for the soul food. Enjoy with a cup of tea as a mid-afternoon snack! Also great for a lunchbox muffin!
Stewed Rhubarb
Rhubarb season is upon us and if you’re LUCKY enough to be growing some (or have an awesome friend growing some) there is sometimes a surplus! My mom always stewed rhubarb in the spring and it holds fond memories. Mom’s version had quite a bit of white sugar -so when a client gave me a bundle I figured it was a perfect time to try and gillicious it up!
Pickled Beans & Onions
Do you ever have a delicious meal at a restaurant and then try to replicate it? That’s exactly what happened here. We were having lunch at a The Commons in Victoria and they garnished their tacos with these pickled onions. The waitress was kind enough to give me the gist of the recipe – and so I tweaked it (honey in lieu of sugar and apple cider vinegar instead of regular vinegar). #superyum
Apple Zucchini Turkey Burgers
I LOVE a good burger – but I also like to keep it a little leaner and shake up the flavours. This little creation came to me after a day of sweating and working up an appetite!
Ginger Soy Quinoa Salad with Chicken
A little bit of prep goes a long way. I really can’t say that enough! This recipe made me feel like the QUEEN of prep! It was together and into my belly in a flash because I had cooked & cooled quinoa and chicken breasts in my fridge. Those two items were a life-saver on a busy night!

Fish Tacos with Caraway Slaw
It’s NEARLY summer (ok it’s barely spring) but really – don’t fish tacos work year round?! They do in my world. I love it with a slaw and what I love best is my kids will eat the fish in a taco with veggies on the side! #winning
