This is a great sneaky fruit & veg muffin with carrots, pineapple, coconut, raisins & seeds! My kids really liked them!

  • 2 1/4 Sprouted Spelt flour (or whole wheat)
  • 2t Baking soda
  • 2t cinnamon
  • 1/2t nutmeg
  • 1/2t pink salt
  • 1C of frozen pineapple thawed
  • 1C chopped carrots
  • 1/2C coconut milk
  • 1/2C coconut sugar
  • 1/4C avocado oil
  • 1T chia seed
  • 2T water
  • 1t vanilla
  • 1/2C unsweetened coconut shreds
  • 1/2C raisins
  • 1/3C pumpkin seeds (sprinkled on top)

Preheat oven to 375F. Spray muffin tins with coconut oil spray. In a large bowl mix: flour, soda, cinnamon, nutmeg & salt. In your blender or magic bullet: thawed pineapple, carrots, coconut milk. Blend until smooth.  Add sugar, oil, chia, water & vanilla to blended mixture. Pour into flour mixture and gently mix. Fold in coconut & raisins. Spoon into muffin tins (it makes 12). Sprinkle with pumpkin seeds.

Bake for 20-25 minutes (until your toothpick comes out clean). Cool on a wire rack. Freeze beautifully – grab and go for lunches or breakfast!
