Rhubarb season is upon us and if you’re LUCKY enough to be growing some (or have an awesome friend growing some) there is sometimes a surplus! My mom always stewed rhubarb in the spring and it holds fond memories. Mom’s version had quite a bit of white sugar -so when a client gave me a bundle I figured it was a perfect time to try and gillicious it up!
4C diced rhubarb
1C frozen organic strawberries
Grated rind & juice of 1 orange
1C water
2T honey
Clean and chop the rhubarb. Place the rhubarb, strawberries, orange rind & juice, water & honey in a pot with a lid. Bring to a boil uncovered. Once boiling, turn off the heat & cover. Let sit for 20min. Stir. Allow to cool & enjoy!
Note: If you are really committed to being sugar free you could try it without – it will be tart, but that can be quite refreshing!
