This was an instant hit with the kids (hello – olives!). And anything that you prep, pop in the oven then walk away from is a hit with me!

2 large chicken breasts, cut into smaller portions
1 can of organic diced tomatoes
1 onion, diced
3 cloves of garlic, minced
20 pitted kalmata olives
4T capers
2t dried basil

Preheat oven to 450F. In a large oven safe baking dish put all ingredients except the chicken. Mix. Layer on chicken and ladle sauce over chicken. Bake for 25-30 minutes or until the chicken is cooked.

I served over prepped quinoa with a simple “greek-ish” salad (peppers, cucumbers & grape tomatoes dressed with S&P, basil, the juice of one lemon, apple cider vinegar & olive oil)

The kids called this “super tomato chicken” and “awesome vegetable pickle” and ate it all up!
