This recipe made me feel like the QUEEN of prep! It was together and into my belly in a flash because I had cooked & cooled quinoa and chicken breasts in my fridge. Those two items were a life-saver on a busy night!


1C frozen peas
1C matchstick carrots
1C chopped broccoli florets
3/4C chopped red pepper
1/4C chopped green onion
2C cooked quinoa
2T fresh Ginger, peeled & minced
2T sesame oil
3T apple cider vinegar
3T bragg all purpose
1/2t garlic powder

Mix well and let sit to allow peas to thaw & ingredients to marinate!

I served with prepped cooked chicken breast for a quick delicious & nutritious meal!
