Mojitos are one of my FAVE summery drinks. Because I love mint & I love limes. I needed a new flavour for my usual quinoa/ lentil salad and that’s how a new recipe is born!

1C quinoa, cooked & cooled
1C brown lentils, cooked & cooled
1 English cucumber, diced
4 carrots, grated
2 limes, juiced
1 generous handful of mint, chopped
2T avocado oil
2T apple cider vinegar
Pink salt & pepper

Cook & cool quinoa & lentils (I usually prep the night before and make in the am OR in the am so I can prep for dinner). To cook lentils mix with 1 3/4 C water. Bring to a boil and simmer on low until water is gone. For quinoa it’s 2:1 water to quinoa ratio, same instructions.

Mix all ingredients together. Let marinate in the fridge (longer the better). I served with salmon cooked in foil seasoned with lemon juice, dill, salt & pepper.
