Eating healthy should NOT be boring! I can’t say that enough. I refuse to eat steamed veggies & broiled lean proteins. For me that is not living (nor is it particularly healthy – hello…healthy fats! Variety! Grains!). But I get life is busy & cooking from scratch can be overwhelming, so here’s a simple concept that you can RUN with. Have fun & get creative. I’ll often set it all up & then let each member of the famjam choose their ingredients!

As with most of my recipes this inspiration struck out of a mad dash to make “chicken” (what was on the menu) more interesting. I always have the staples of canned tomatoes & olives on hand (yes olives are a staple at our house), so this came together easily and the WHOLE fam loved it (except Connor & the olives – only Chase loves olives as much as Mike & I!). This simple salad pulled together in a snap & was also great the next day. I served it with grilled salmon (those are my leftovers in the pic #winning) but it would also be great with grilled tofu or chicken. Or you could throw in some edamame for a quick simple one bowl option!
