Healthy Bowls to the Rescue!
Eating healthy should NOT be boring! I can’t say that enough. I refuse to eat steamed veggies & broiled lean proteins. For me that is not living (nor is it particularly healthy – hello…healthy fats! Variety! Grains!). But I get life is busy & cooking from scratch can be overwhelming, so here’s a simple concept that you can RUN with. Have fun & get creative. I’ll often set it all up & then let each member of the famjam choose their ingredients!
Super Simple Greek Chicken
As with most of my recipes this inspiration struck out of a mad dash to make “chicken” (what was on the menu) more interesting. I always have the staples of canned tomatoes & olives on hand (yes olives are a staple at our house), so this came together easily and the WHOLE fam loved it (except Connor & the olives – only Chase loves olives as much as Mike & I!). If you need a quick simple dinner – here you go!
Chewy Ginger Cookies (gluten free)
I love a good chewy ginger cookie. They’re my fave Christmas treat. But I also aim to be gluten free (not for the fad but for my body), so this is a modified recipe that I found on Epicurious.com years ago. I always double the recipe. I always freeze them. And they’re always amazing.
Pumpkin Spice Muffins
I love pumpkin spice (who doesn’t really – don’t tell me…I don’t want to know). This simple muffin is full of goodness & a great addition to the lunchbox (young or not so young).
#boom Butter Chicken
Butter Chicken. What’s not to love? This classic Indian dish is rich & delicious…but made traditionally it’s not the leanest or lightest. But this version made with Chicken Breast & incorporating some veg makes it a little healthier – while still retaining it’s AWESOMENESS.
Nutritional Yeast Vinaigrette
I love this dressing. It’s simple, I can make it super quick in a mason jar so it’s a no fuss, no muss kinda dressing.
Kale & Chickpea Salad
Have you ever had something to eat at a restaurant that you wanted to replicate at home?! Me too! All the time. I draw inspiration from meals out & replicating it at home is not only delicious…but it takes me back to the beautiful memory! And since I had this at Scandive Spa in Whistler….um, hello! Great news? It’s a simple one to make at home!

Smoothie Pops!
It’s summer and my kids LOVE popsicles (frankly, so do I)! I don’t however LOVE all the dyes and chemicals in MOST popsicles. But smoothies freeze beautifully and make great pops (with some nutritional value).

Ginger Soy Quinoa Salad
This simple salad pulled together in a snap & was also great the next day. I served it with grilled salmon (those are my leftovers in the pic #winning) but it would also be great with grilled tofu or chicken. Or you could throw in some edamame for a quick simple one bowl option!
