I had this AMAZING salad at Scandive Spa in Whistler (if you’ve never been you should add that to your bucket list! #amazing). As always, when I have a delicious salad I try to replicate it at home! Not only does it keep my meals inspired….food has a beautiful ability to take you back to the experience. And hello….SPA day with amazing friends?! I want to go back! In the meantime…this salad will have to do!
Here’s the salad recipe (per serving):
1-2C Kale, torn into bite sized pieces
1/4 C grated carrot
1/4 C finely sliced red cabbage
2-3T fresh mint, chopped
4-5 dates, chopped (I used semi-dry Deglet Noor which are better for chopping)
1/4C roasted chickpeas
Dressing: Tahini Dressing
1/4C sesame tahini
1/4C apple cider vinegar
1/8C avocado oil
2 heaping T of nutritional yeast
1T maple syrup
1t garlic powder
1/2t coriander
1/4C water
Blend until smooth. Add more water to desired texture.
