I love bean salad, but commercial bean salads are full of yucky chemicals and junk and bean salad is actually SUPER easy to make. Here’s my go-to recipe (serves 8):

2C chopped green beans

2C chopped pepper (about 2 peppers – I used multiple colors)

1/4 onion, minced

1 500ml can of black beans

1 500ml can of kidney beans

2T avocado oil

3T apple cider vinegar

1T Dijon mustard

1T honey

1/2t garlic powder

1t dried tarragon (or about 1T fresh)

Pink salt & pepper (to taste)

Mix all ingredients and allow to sit. This is a great make-ahead salad and is even better the next day!

Optional: lightly blanch the green beans by putting them in boiling water for 1 minutes (until they soften slightly and become bright green). Rinse with ice water to stop cooking.
