This simple salad pulled together in a snap & was also great the next day. I served it with grilled salmon (those are my leftovers in the pic #winning) but it would also be great with grilled tofu or chicken. Or you could throw in some edamame for a quick simple one bowl option!
2C cooked quinoa
1C frozen peas
1/2C matchstick carrots
1/2C chopped celery
1C chopped peppers
1C chopped red cabbage
2 chopped green onions
2T sesame oil
2T apple cider vinegar
2T rice wine vinegar
2T Bragg (alternative soy sauce)
1/2t ground ginger (1t minced fresh would also be great)
1/2t garlic powder (1 clove minced also works)
Pink salt & pepper to taste
Mix all ingredients and allow to sit. Frozen peas don’t need to be thawed in advance – as you mix they will thaw nicely! makes 4 meal sized servings.
