Wild Rice Salad with Ginger Sesame Vinaigrette
I know I ALWAYS seem to be harping on this…but a little prep goes a long way. Wild rice has a long cooking time (aka 45 minutes = FOREVER). Way too long for me on a weeknight. So prepped wild rice made pulling this salad together a SNAP (peas included). Not only was it delish, extras for lunch (smartypants) – the kids really liked it (for real – my kids really do eat the stuff I post!).
Healthy 2-Bite Brownie Balls
They may be misshapen, but man were they delicious (and simple and quick to make a single serving “batch” – YES I ate them all!)
Miso Burgers with Peanut Miso dressing
I’m on a MISO kick (have you noticed)! This one was another BIG hit with the kids (even with those green onions in there – yay me!) AND made for wicked lunch leftovers (cold or heated up). I served the burger up with siracha pickled cucumbers. Ok, maybe it’s a siracha kick too!
Spicy Tofu Bowl with Maple Miso Dressing
Dinner in a bowl. It’s honestly a favourite. Simple food. Beautiful colors. One dish to do. I’m in heaven. This was another bowl-hit at our house – the kids even asked for seconds!
Rice Salad with Tarragon Vinaigrette
I feel like you can never truly go wrong with a salad that has grapes and goat cheese. Am I wrong? This one is especially simple if you’ve got some prepped rice in the fridge! Enjoy!
Simple Pickled Beets
I love beets. I’m not private about my love affair with them. I like them roasted, in salads, on their own, raw, grated, pretty much any way. I also love all things pickled. So this is one of my faves to the nth degree.

A client shared this delicious concoction with me and directed me to this recipe. But as per usual I tweaked it to make it a little healthier/ make use of the ingredients I had on hand (just a smidge – it’s pretty darn healthy already). I also came up with a “how to” essential instruction that enables you to customize the bowl to your choosing. How FUN – it’s like your own little salad bar!
