YUM! Simple ingredients & some prep = GOLD when you come home from a workout/ work/ life and need to eat quick! This tasted very much like a rich risotto but made with simple ingredients & QUICK (did I mention quick?!)
3/4C Cooked frozen shrimp, 1C+ veggies (green beans, pepper & carrots) in a pan with a squeeze of fresh lemon & some S&P. Cook long enough to thaw the shrimp & lightly cook the veg. Toss in 1/2C prepped quinoa & 1T pesto.
