A client shared this delicious concoction with me and directed me to this recipe. But as per usual I tweaked it to make it a little healthier/ make use of the ingredients I had on hand (just a smidge – it’s pretty darn healthy already). I also came up with a “how to” essential instruction that enables you to customize the bowl to your choosing. How FUN – it’s like your own little salad bar!
For the bowl the concept is this:
- Whole grain (1/2 C) – brown rice, wild rice, quinoa, barley
- Veggies (1-2C) – sprouts, grated or matchstick carrots, grated beet, grape tomatoes, peppers, cucumbers, chopped spinach or greens
- Seed or nut (1T)- I enjoyed a combo of almonds & hemp hearts, but pumpkin seeds or sunflower seeds would be awesome
- Protein (3/4C) – I stir fried tofu in this pic but it would be good with baked or bbq’d chicken, or salmon too!
- Dressing (1-2T)
For the Glory Bowl Dressing:
1/4 cup (125 mL) nutritional yeast flakes
3T Bragg
3T apple cider vinegar
3T water
1T tahini
1 garlic clove
2/3 C Avocado oil
Blend all ingredients until smooth. Keeps in the fridge for a week (or less because it’s just that yummy!).
