Love the simplicity of the flavours in this salad. It reminds me of my fave pasta dish at Pagliacci’s Restaurant in Victoria, BC (add it to your MUST GO list if you’re ever there!). The dish there is called “My Secret Garden” – it’s a gorgeous pasta dish with marinated veggies & cheese. Ahhh-mazing! This dish is a bit healthier (and more convenient for me here in Nanaimo) & so lovely and light as the temps warm up!
Make it a meal: Pair it with BBQ’d salmon or chicken souvlaki – so delish!
 
Serves 4.
3C spiralized Zucchini (if you have a spirilizor this would be about 1 large or 2 small zucchini or you can purchased spiralized as some produce departments now! #winning)
1C of grape tomatoes
4t olive oil
4t apple cider vinegar
1t garlic powder (or finely minced garlic – 1-2 cloves)
sea salt & pepper to tastes
4T crumbled feta cheese
 
Mix & serve. If I’m eating this away from home I chop it up some so I don’t make an unholy disaster trying to eat the zucchini zoodles!
