This recipe is made LIGHTENING fast with a little help from meal planning & prep. Ingredients are quick, the chopping is minimal, and if you’ve already cooked your quinoa and cooled it. BOOM. Done.

Here’s my quick recipe:
1/4C almond butter
1/4C coconut aminos
1T sesame oil
2T rice wine vinegar
1/2t red pepper flakes
1t minced fresh ginger
2T minced red onion
3/4 bag of old fashioned (thinly sliced) slaw
1 red pepper chopped
1 handful of cilantro chopped
1C of quinoa cooked & cooled

Mix up the dressing in the bottom of the bowl, add in the rest of the ingredients and voila! I served it with a palmful of almonds & 1T hemp hearts. It would also be delish with BBQ’d chicken breast on top!
