I was looking for a simple muffin recipe that included apples, carrots and was gluten free and didn’t find one that fit the bill, so I created this one! Super happy with how they turned out! Bonus: they freeze and thaw beautifully as a lunchbox item!
1 apple, peeled and grated
2 carrots, peeled and grated
1 1/2C water
2 eggs, beaten
1/2C coconut sugar
2T chia seed
2C Gluten Free Flour (I used an all purpose blend)
1/2C Ground Flax
1/2C Hemp Hearts
1/2C raisins
2T cinnamon
2T baking powder
2t baking soda
1/2t salt
Pre-heat the oven to 350F. Oil muffin tins (I used avocado oil). Because it’s how I roll in a giant bowl I add all the wet ingredients and the chia seed. Mix up. Layer on the dry ingredients and gently mix in until it’s all well mixed.
Bake for 20-25 minutes or until your toothpick comes out clean. Made about 18 muffins.
