Hey kids, want a cookie for breakfast?!
(I just got mother of the year award)
The kids were skeptical, but I’ve got a secret! These “cookies” are full of great nutrition!
1C unsweetened applesauce
2 ripe bananas, mashed
1/2 cup of nut or seed butter
4 scoops of vanilla protein powder*
1.5C whole flake oats
2C almond flour
1/2C hemp hearts
1/2C ground flax
1t baking powder
1t baking soda
1/2t sea salt
1t cinnamon
1/2C mini chocolate chips
Preheat the oven to 350F. In a large bowl mix wet ingredients. Add in protein powder & mix well. Layer on dry ingredients & mix.
Drop about 1/2C of the mix onto a cookie sheet and shape if needed into a cookie. Bake for 20-25 minutes until they are slightly brown & firm to touch at the edge. Cool on the sheet and then store in a ziplock baggie or container. My extras went in the freezer for weekday breakfasts.

Want less sugar? Swap out chocolate chips & add nuts or seeds of your choice!
I served it with fruit. Best part? Totally self serve in the morning!
*I use Vegan Shakeology for my daily shake, but for these I chose to use Vega greens & protein vegan protein.
