I love Miso Soup. I concocted this when I wanted to take it for lunch and needed it to be transportable! Enjoy!
Serves 1
- 1T Miso Paste
- 1C water
- 1C chopped veggies (cauliflower, brocolli & carrots are yummy)
- 3/4C chopped protein of choice (tofu or chicken work well)
In a microwave safe dish whisk the miso paste & water until smooth. Layer in the veggies then the protein. At lunch cook in the microwave for 1-2 minutes to desired softness of veggies. Enjoy!
