This concoction was created because I had no real plan for dinner. But I did have pasta & tuna in the cupboard!
4C cooked & cooled Whole grain pasta (I used Tru roots ancient grains)
2 cans of solid white tuna in water, drained
1C grape tomatoes, halved
1/2 cucumber, diced
16 kalmata olives, pitted & halved
Handful of each: fresh basil & flat leaf parsley, chopped
Dressed with my simple go to vinaigrette:
-1T olive oil
-2T apple cider vinegar
-juice of 1 lemon
-pink salt & pepper to taste
Mix & enjoy straight away OR serve it up into mason jars or containers and pop it in the fridge – it’ll be even better the next day for lunch when all the deliciousness marinates.
Traditionally Niciose has green beans (didn’t have any). You could add/ swap out the cucumber, if you were so inclined!
