You know when you re-discover a cookbook and find a gem of a recipe in it?  Yup. LOVE that! Welcome to the rotation Chili-Garlic Glazed Salmon with Minty Peas!

Recipe from a book called “Fresh Food Fast” with a couple of modifications from moi.

Salmon: 
2T chilli sauce with garlic
3 minced green onions
1T orange marmalade
2t Bragg
4 salmon fillets

To prepare: preheat broiler. Mix the glaze and spread 1/2 on top of fillets. Broil for 5 minutes. Add the rest of the glaze & broil for another 2 minutes. I used skinless fillets, but if you have ones with skin, cook skin down.

While the salmon cooks add about 1t oil to a pan, heat on medium & add snap peas (about 1C per person). Sauté until tender crisp. Add the rind & juice of 1 Orange and a palmful of mint leaves shredded. Sprinkle with salt.

I started the rice before the salmon and it was ready all at about the same time!

The whole meal was a huge hit! Connor loved the salmon & Chase loved the peas!
