Is there anything more fantastic than coming home to dinner almost being done? I think not. Threw this one together and left the house for a busy day and came home and it was nearly done! #magic

Throw in the Crock Pot on LOW for 6-8 hours:

  • 4-6 Chicken Breasts (depending on how many you need to serve)
  • cover with broth (chicken, veggie or beef)
  • 1C Salsa of your choice
  • 2T Chili Powder
  • a few dashes of hot sauce of your choice (I used Franks)

Once it’s done the chicken will be super tender and fall apart, pull each breast out and shred. To the juice/ salsa/ broth add in 1-2T of flour of choice (I used a gluten free blend) and whisk together. This will thicken it up (yum). Add back the chicken and allow to season while you prep the rest…

For the slaw:

  • Bag o slaw (yup, the classic one from the grocery store)
  • 1/2 red or yellow pepper, diced finely
  • 3-4 stalks of celery, diced finely
  • dress with olive oil & lime juice

Layer on Corn tortillas (or whatever tortilla you prefer): Slaw, chicken mixture and top with Avocado & chopped cilantro (if you like it). For extra flavour you can squeeze on some fresh lime!
