This simple quinoa salad pairs beautifully with grilled meat OR add in a can of chickpeas for a great all in one bowl vegan meal!

Makes about 4 servings.

1C dry quinoa (cooked & cooled – about 2C cooked)
1 Granny Smith apple chopped
1/4C raisins (currents would also be great)
1/4 red onion, minced
1/4C mint leaves, chopped

Dressed with:
Juice of 1 lemon
2T olive oil
2T Apple cider vinegar
1t curry powder
S&P

Served with toasted pumpkin & sunflower seeds.
