Super simple: I layered mixed greens with one sliced peach and goat cheese crumbles and drizzled with the dressing below.
Tarragon Honey Mustard Dressing (1 serving)
1t olive oil
1T Apple cider vinegar
1/2t grainy Dijon
1t fresh tarragon (swap out 1/4t dried if you don’t have fresh)
Pink salt & pepper to taste
Make it a mea: I think it would also be delish if I’d added some fresh blueberries & walnuts or served it with grilled chicken!
