This is simple, fresh and SO tasty! And is great leftovers! We had it with my Red Hot Spicy Peas & grilled salmon but it would be good with a simple protein or as a side to a burger (yummo).

1 fennel bulb, sliced finely

1/4 red cabbage, sliced finely

2t avocado oil

2T apple cider vinegar

1t maple syrup

Juice of 1 lemon

salt & pepper to taste

 

Directions:

These directions are tricky…so pay attention…

Mix all ingredients together.

Note: it’s better if you can mix and let sit for 20-30 minutes, but also delish right away!
