Simple. SO simple.

You need:

  • zuchini
  • peppers
  • chicken breast
  • cooked quinoa
  • apple cider vinegar
  • avocado oil
  • s&p

How to make it:

  1. Turn on the BBQ to medium
  2. Put Chicken Breasts on and brush with a small amount of avocado oil
  3. Cut up Zuchini lengthwise and peppers in half (seed them).
  4. Brush veggies (clean brush) with oil & sprinkle with S&P
  5. Put veggies on BBQ
  6. Cook chicken & veggies
  7. Pull quinoa out of fridge (because you prepped it earlier in the week #preprockstar)
  8. In a mixing bowl put in # servings required for quinoa (1/2C per person)
  9. Add in: apple cider vinegar & avocado oil (equal parts, approx 1t each per person), pink salt & pepper
  10. Pull veggies off bbq – chop up – put in bowl – mix
  11. Dish quinoa, veggies salad
  12. Pull cooked chicken off bbq – let rest for a few minutes – place on top of salad.
  13. Serve and look like a ROCK STAR.

1 yellow, 1-2 green (depends on veggie volume), 1 red, 1t
