We used to have this delicious little restaurant called the Urban Beet here in Nanaimo. They had an AMAZING quinoa salad with…beets. This is my attempt to re-create it (with a few of my own added touches for flair).

1C quinoa
2-3 cooked beets (I buy “love beets” from Costco)
4 stalks celery, chopped finely
1/2 cucumber, chopped finely
3-4 grated carrots
1C frozen kale (or chopped fresh)
1/4C crumbled goat feta
1T olive oil
4T Apple cider vinegar
Pink salt & pepper

Cook to quinoa to instructions and let cool completely. Chop up the beets and put in a bowl. Drizzle with olive oil & apple cider vinegar. Add S&P. Layer on remaining ingredients to let the beets marinate. And then mix. The salad almost has a pickled taste to it. The original definitely didn’t have carrots but I like the addition! #simplefood #eathealthy #superyou
