This is a new SIMPLE & quick fave in our house. Vegan & kid approved!

-1 can of black beans, drained & rinsed
-1T olive oil
-1 onion, minced
-2 cloves of garlic, minced
-1 zuchini, diced
-1 yellow or orange pepper, diced
-1/2C grape tomatoes, diced
-1/2C corn (canned or frozen), drained & rinsed
-1t chili powder, S&P to taste
-corn or whole grain tortillas

Note: rinsing both the corn & beans will remove some of the salt

Directions: saute the onion and garlic in the olive oil until softened. Add in zuchini & pepper until tender crisp, add in tomatoes and corn and allow to cook until tomatoes soften, and then add in the beans and spices and let the flavours develop.

Layer onto toasted corn tortillas or wrap into a whole grain tortilla, top with vegan cheese (if vegan/ dairy free) or cheddar and avocado.
