Yum. Yum. When leftover ham inspires a new take on Chicken Soup! Chicken Cordon Bleu Soup!


1T olive oil
1 onion, chopped fine
3 cloves of garlic, minced
6 celery stalks, chopped
2 carrots, chopped
1/4 head of cauliflower , chopped
4 large new potatoes, cubed
2 chicken breasts, cut into bite sized pieces
1/2C chopped ham
8C chicken broth
Salt & pepper to taste
Parmesan to garnish


Sautée the veg until tender crisp, add in the ham, chicken & broth. Bring to a boil until everything is cooked!
