Serves 4 with leftovers for 1 lunch (win!)
-3 chicken breasts
-2 peppers
-1/2 red onion
-2C sliced mushrooms
-1T chili powder
-1 lime
-1/2 avocado
-franks red hot sauce
-corn or whole grain tortillas
-salsa
In a large non stick skillet with a quick spray of olive oil sauté the diced chicken breast until it’s browned. Add in chopped red onion and peppers. Once that’s cooked for a minute add in the mushrooms and the juice of 1/2 your lime and chili powder, then cover. Stir occasionally. As it cooks mash the avocado with the juice of the other line half, and franks, S&P to taste. Toast the tortillas. Layer it all together (fajita mixture, guacamole, salsa) and eat right away! Get a napkin!
