My secret ingredient in these awesome goodies? Mashed Banana. They’re part cookie, part muffin, and because they’ve got chocolate chips they’re ALL awesome in my books.
- 1-2 mashed bananas
- 2T Maple Syrup
- 1T coconut oil, melted
- 1/4C Superbutter (seed butter) OR natural almond or peanut butter
- 1T chia seeds
- 2C rolled oats
- 3/4C spelt flour
- 1/4C mini chocolate chips (mini makes them go further…spread out that chocolatey goodness!)
Preheat the oven to 375F. Mash the bananas then add in the maple syrup, coconut oil, nut butter & chia seeds. Then add in the rest of the ingredients and mix well. Using 2 tablespoons portion out the (very sticky) dough and roll into 1T (ish) balls and put them onto your cookie sheets. You may want to wet your hands slightly so the dough doesn’t stick to your hands too much! Bake for 10-12 minutes until they’re golden.
