Shhhhhhh don’t tell them!

This creamy Mac & cheese isn’t full of cheddar….is full of…..PUMPKIN!

Sauce:
1T butter (you could likely sub olive or avocado oil)
1T spelt flour
3/4 C unsweetened coconut milk
1t each: garlic powder, onion powder & dry mustard
Pepper to taste
1/2C pumpkin
1/3C soft goat cheese

Directions:
Melt the butter over med heat. Whisk in flour. Add in milk slowly, stirring constantly with whisk. Add seasonings. Add pumpkin & cheese until melty. #superyum

I used ancient grains penne and BOTH BOYS asked for 2nds!
