A friend shared this recipe on Facebook and I loved it! I wouldn’t change a single thing. Ok. Not true, instead of spinach I added kale, because #kale (also because it stands up better for leftovers – less slimy on day 2).
I also felt I wanted a little sweet chutney to add to this deliciousness so I played on an Oh She Glows idea and made this quick stovetop chutney!
1 apple, chopped finely (peel on)
1/2C frozen mango, chopped into fine chunks
1/2 red pepper, chopped finely
2T onion (I used the white ends of a green onion because I was out of onion, but any onion will do
1/2-3/4C vinegar (I used apple cider vinegar)
2T coconut sugar
Place all ingredients into a small pot and bring to a bowl, stirring occasionally (watch for it – boiling over will create a HOT mess on your stove (literally). Once it comes to a boil, reduce heat and allow to simmer until the veggies and fruit are softer and it looks like….chutney! Allow to cool.
I did this all while the instant pot was doing it’s think (aka magic), and served it all at the same time. It was DEEELISH! Enjoy!
