I love fennel. It’s crunchy like celery but has a lovely mild licorice taste. This salad is great on it’s own or served as a fresh summer side!

In a bowl whisk together:
1T olive oil
1t Dijon mustard
1t honey
2-3T Apple cider vinegar
Pink salt & pepper to taste

Add in:
1 fennel bulb sliced finely
1 Apple chopped
2-3 stalls of celery chopped

Mix together and serve! Even better if it marinated in the fridge for a few hours and good for a couple of days (hello lunch tomorrow too!). Sprinkle a few pumpkin seeds or slivered almonds for serving to add in some protein and healthy fats!
