Hot weather = cold soup! Gazpacho is quick, simple & delicious. It’s basically blended salad (awesome). Here’s my recipe:

Put the following the the blender:
-1 can of diced tomatoes
-1/2 cucumber
-1/2 onion
-1 cloves garlic
-1 pepper (green, red, Yellow or orange)
-2T olive oil
-4T apple cider vinegar
-1t cumin
-1t hot sauce (franks)
-S&P

Blend until smooth and then add chopped:
-1 cucumber
-1 pepper
-1C grape tomatoes
-1/4C parsely (I used flat leaf)

I served it up with some goat cheese crumbles, but it’s also lovely with some sour cream or plain greek yogurt.
