This delicious salad is lovely served with BBQ’d pork chops but would be great with grilled chicken or simply on its own as a simple lunch! Best part – the leftovers just got better! mmm. Leftovers.

1C Wild Rice cooked & cooled( I used the try roots blend with quinoa)
1 gala apple, chopped
1/4 red onion, minced
3 green onions, chopped
4 stalks of celery, chopped
8 dated, pitted & chopped

2T olive oil
4T Apple cider vinegar
1T pure maple syrup
Pink salt to taste
2T chopped fresh tarragon
I served it sprinkled with some crumbled goat cheese. #superyum
