Fresh & tasty salad alert! This was so simple really tasty. My kids LOVE edamame so that made it an instant hit (even if my 6-year old picked out ONLY the edamame #reallife)
Make it a meal: top the salad with grilled salmon that I brushed with a little bit of the dressing (I stole about 1T from the bowl).
Serves 4 (generously)
1T miso paste
2T sesame oil
2T Bragg (or soy sauce)
2T Rice Wine Vinegar
1T finely chopped fresh ginger (or 1t powder)
1/4 red cabbage, sliced finely
2 carrots, grated
1 red pepper, chopped finely
2 stalks celery, chopped finely
1C snap peas, chopped
1C Edamame, Cooked & peeled (I used frozen & thawed them under water)
In the bottom of a medium bowl whisk together Miso, oil, bragg, rice wine vinegar & ginger. Add in the veg. Mix & allow to marinate.
