I’d been having a Ramen craving for a few days and since I had the noodles (the brown rice ramen from Costco), I figured, I could likely piece together a ramen-inspired bowl. And this was the result. Three out of four Goerzen’s thought it was awesome. One thought it would be better without the noodles (whose kid is this?! Not mine! LOL). Here’s how it came together!
Ingredients:
  • 2t sesame oil
  • 1 onion sliced finely
  • 2 cloves garlic, minced
  • 1/2t ground ginger (chopped fresh of you have it – i’d say about 1T of minced)
  • 2T heaping miso paste
  • 2 boxes of broth
  • Soy sauce or Bragg (to taste)
  • Ramen noodles (Costco)
  • 4C frozen veg (I bought a mix of broccoli, carrot, cauliflower and green beans)
Directions:
Sauté the onion & garlic in the sesame oil until fragrant, add in ginger and miso paste and stir, add broth and whisk until smooth. Bring to a boil. Add uncooked noodles. When the noodles are almost done (these ones only take 3-4 minutes) add the frozen veg and 1C more water. Add soy sauce/ Bragg/ sriracha to taste. I topped with caramelized sautéed tofu for some protein, but you could add a traditional soft boiled egg. Enjoy!
