Picked up the Tilapia burgers from Costco (frozen) and the bag suggested a pineapple slaw…but gave no recipe. But it sparked an inspiration!

Pineapple Mojito Slaw (serves 2):
1/2 bag Old fashioned slaw
Handful of flat leaf parsley & mint, chopped
1/4 Red onion, minced
Juice of 1 lime
2T apple cider vinegar
1T olive oil
1/2 C grilled fresh pineapple (just grill on the BBQ for 2 minutes or so to bring out the flavour)
Pink salt to taste

We were out of buns so I had my slaw with the burger on top. The slaw/ burger would be great with a whole grain bun!
